Fall Recipes: Healthy(er) Peanut Butter Apple Crisp

One of my favorite things about Fall is all of the delicious, fresh apples and all of the yummy recipes that you can make with them! Apple Pie and Apple Crisp are two of my all time favorite desserts, but this year I've decided that I needed to find a healthier alternative. I was surfing Pinterest and came across this delicious recipe for Healthy Peanut Butter Apple Crisp and knew immediately that it would be my winner! And the best part? The recipe is for two servings, so there's no obligation to finish a whole pan of it to keep it from going to waste ;)


INGREDIENTS
  • Juice of 1 lemon
  • 2 Tbsp. creamy peanut butter
  • 1 tsp. honey
  • 2 apples, chopped into ½" pieces
  • ¼ c. old fashion oats
  • 1 Tbsp. creamy peanut butter
  • ¼ tsp. cinnamon
  • pinch of salt
INSTRUCTIONS
  1. Preheat the oven to 350°. In a large bowl, whisk the lemon juice, peanut butter and honey. Fold in the chopped apples until they are well coated.
  2. In a separate bowl, using a fork, combine the oats, 1 Tbsp. peanut butter, cinnamon and salt until the mixture is crumbly. Divide the apple mixture between two greased ramekins and top with the oatmeal crumble.
  3. Bake at 350° for 45-50 minutes. Serve immediately.

I did it! I finally did it!

Hey everyone!

Welcome to my new blog. This has been a dream in my head for the past... well, for a long time. This past week, I finally sat down and made it a reality. I'm super excited to use this site to not only provide health, fitness and wellness inspiration and motivation but also to get a little more personal and share and document some of the fun stories and happenings of the day to day life of our family. I hope to include a little bit of something for everybody - recipes, workout ideas, products that I love, inspirational quotes and stories, motivation for busy mamas (and non-mamas alike!), and a little peek into what life is like for our active little bi-continental family.
